SEASONALITY CALENDAR
🌱 Spring (March -May)
Spring is a transition period, and transitions tend to create volatility.
During these months, the industry is shifting from winter growing regions into California and other domestic areas. The challenge is timing. Winter crops may be finishing up before local crops are fully ready, which can create temporary gaps in supply.
You may see shortages or inconsistent availability early in the season
Pricing can fluctuate depending on how clean that transition is
Weather in key regions can have an outsized impact during this window
This is a time to stay flexible.
If you're open to substitutions and working with what’s flowing well, you can avoid overpaying during short supply gaps. Paying attention to what's transitioning in and out can make a meaningful difference in both cost and quality.
☀️ SUMMER (June - August)
Summer is typically the most stable and favorable season across the board.
Most products are being grown closer to home, especially throughout California, which improves both supply and quality while reducing transportation time.
Better availability across most items
Stronger quality due to shorter transit times
More competitive pricing driven by higher supply
This is generally the best time to take advantage of the market.
Menus, offerings, and purchasing strategies that lean into what’s abundant during the summer months tend to deliver the best combination of quality and value.
🍂 Fall (September - November)
Fall starts strong and gradually shifts into another transition period.
Early fall often continues the stability of summer, but as temperatures drop and growing seasons end, products begin to move out of local regions and into winter sourcing areas.
Early fall can still offer excellent availability and pricing
As the season progresses, certain items begin to tighten up
Supply shifts can start to impact both price and consistency
Take advantage of early fall while conditions are still favorable.
As you move deeper into the season, it becomes more important to stay aware of which items are finishing up and begin planning for the transition into winter sourcing.
❄️ WINTER (December - February)
Winter is where supply becomes more dependent on imported and southern-grown product.
Much of the supply shifts to Mexico and, in some cases, South America. Weather events in these regions can have a major impact on both availability and pricing.
Higher prices driven by supply limitations and transportation costs
Greater exposure to weather-related disruptions
More variability in availability across certain products
Planning ahead matters most during winter.
Being proactive, flexible, and aware of market conditions can help you avoid surprises. This is the time when understanding the “why” behind pricing becomes especially valuable.
